Resumen:
El presente proyecto se enfoca en el diseño de procesos para el faenamiento y
comercialización de carne de cerdo en el cantón San Miguel de Los Bancos, en
forma de carne procesada altamente higiénica y con estándares de calidad,
mediante la investigación del mercado se determinó que existe una gran de manda
de carne de cerdo en este sector, a su vez existen grandes oferentes del producto
altamente especializados y con gran experiencia en el mercado, pero sin satisfacer
por completo la demanda. La carne que se ofrecerá provendrá de cerdos de raza
debidamente cuidados por personal altamente capacitado, contado con la
infraestructura necesaria como galpones, oficinas y una planta de tratamiento de
agua que permitirá cumplir la normativa legal relacionada con el ambiente,
procurando verter al sistema de alcantarilla agua sin contaminantes ni sólidos
suspendidos. La evolución económica y financiera realizada al proyecto permitió
determinar la alta viabilidad económica del mismo, con un valor actual neto
positivo y mayor a cero, una tasa de retorno superior a la referencial del mercado
y muy atractiva, así como un periodo de retorno de la inversión dentro de los
cánones aceptables para un proyecto de este tipo.
