Resumen:
El maní es un alimento que se caracteriza por poseer un alto valor nutricional,
contribuye a reducir el colesterol y es una rica fuente de energía para el organismo, es
un producto utilizado para preparar platos típicos en la gastronomía ecuatoriana; Es por
ello que la presente tesis tiene por objetivo primordial elaborar derivados de maní 100%
naturales los cuales presentan beneficios en la salud del ser humano. En el primer
capítulo se describió la contextualización del espacio temporal, seguido de las
investigaciones previas y la definición del cuerpo teórico. En el segundo capítulo se
desarrolló el marco metodológico en el cual se utilizaron dos instrumentos de
investigación, la encuesta y la entrevista, posteriormente se tabuló los resultados de
ambos instrumentos que ayudaron a la interpretación de los resultados obteniendo
información veraz y específica del tema en cuestión. En el tercer capítulo se procedió a
realizar la propuesta la cual contenía el estudio del mercado, el análisis financiero, los
procesos de producción, el estudio general de la organización, el estudio legal y el
ambiental, por último se redactó conclusiones y recomendaciones finalizando con los
anexos y la bibliografía.

The peanut is a food that is characterized by high nutritional value, helps reduce
cholesterol and is a rich source of energy for the body, is a product used to prepare
typical dishes in Ecuadorian cuisine; That is why this thesis has as its primary objective
to produce derivatives of 100% natural peanuts which have benefits in human health. In
the first chapter, the contextualization of temporal space was described, followed by
previous investigations and the definition of the theoretical body. In the second chapter
the methodological framework was developed in which two research instruments were
used, the survey and the interview, afterwards the results of both instruments were
tabulated, which helped the interpretation of the results obtaining truthful and specific
information of the subject in question . In the third chapter proceeded to make the
proposal which contained the market study, financial analysis, production processes,
general study of the organization, legal and environmental study, finally drafted
conclusions and recommendations ending with the annexes and the bibliography.
