Resumen:
El avestruz es actualmente un ave exótica que da origen a varios productos de buena calidad
entre ellos la carne; es por ello que la siguiente tesis tiene por objetivo dar a conocer al
público en general de una nueva opción alimenticia que son los embutidos; aquellos que se
caracterizan principalmente por ser hechos de carne de avestruz la cual contiene bajos
contenidos de colesterol, calorías, grasas y es rica en nutrientes y proteínas. En el primer
capítulo se desarrolló la contextualización del espacio temporal, las investigaciones previas
del tema en cuestión y el cuerpo teórico del mismo. En el segundo capítulo se estableció el
marco metodológico, se aplicó dos instrumentos de investigación entre ellos tenemos la
encuesta dirigida a los pobladores de Amaguaña y la Entrevista dirigida a la competencia, se
procedió con la tabulación de los instrumentos utilizados que ayudaron a la interpretación
de los resultados obtenidos. En el tercer capítulo se elaboró la propuesta del plan de negocios
en las que van incluido, estudio de marketing, estudio financiero, estudio técnico, estudio
legal y ambiental, por último se redactó conclusiones y recomendaciones y se incluyó los
anexos y además la bibliografía citada de los diferentes autores, libros, tesis, páginas web,
entre otros.

The ostrich is currently an exotic bird that gives rise to various products of good quality
including the meat; is for this reason that the following thesis aims to inform the public in
general of a new food option that are cured meats; those who are mainly characterized by
being made of ostrich meat which contains low content of cholesterol, fat, calories and is
rich in nutrients and protein. In the first chapter unfolded the contextualization of the
temporary space, previous investigations of the subject matter and the theoretical body of
the same. In the second chapter the methodological framework was established, two applied
research including instruments have the survey addressed to the inhabitants of Amaguaña
and interview aimed at the competition, we proceeded with the tabulation of the instruments
used who helped with the interpretation of the results obtained. In the third chapter was
elaborated the proposal of the business plan in which are included, study of marketing,
financial study, technical study, environmental, and legal study was finally drawn up
conclusions and recommendations and included the annexes and in addition the cited
literature of different authors, books, theses, websites, among others.
